Singaporean Recipe for Coconut Jelly

INGREDIENTS

  • 400ml coconut cream
  • 1 cup milk
  • 2 cups water
  • 1/2 cup sugar
  • 1 X 12g agar agar powder
  • 1/2 cup desiccated coconut
HINT: To replace coconut cream, use 1 1/2 cup of descciated coconut mixed in a food processor or blender with milk and water, adding extra 1/2 cup water.

To prepare:

  • Pour coconut cream, milk and water into a saucepan
  • Add sugar and agar powder and mix well
  • Bring to a boil and simmer, stirring constantly for 3 mins
  • Stir in desiccated coconut
  • Pour into a bread loaf pan and leave to cool/set
  • Cut into squares
  • Serve cold
I usually like to serve this dessert with fresh strawberries.
