Singaporean Recipe for Coconut Jelly
INGREDIENTS
- 400ml coconut cream
- 1 cup milk
- 2 cups water
- 1/2 cup sugar
- 1 X 12g agar agar powder
- 1/2 cup desiccated coconut
HINT: To replace coconut cream, use 1 1/2 cup of descciated coconut mixed in a food processor or blender
with milk and water, adding extra 1/2 cup water.

To prepare:
- Pour coconut cream, milk and water into a saucepan
- Add sugar and agar powder and mix well
- Bring to a boil and simmer, stirring constantly for 3 mins
- Stir in desiccated coconut
- Pour into a bread loaf pan and leave to cool/set
- Cut into squares
- Serve cold
I usually like to serve this dessert with fresh strawberries.
