Chinese Recipe for Deep Fried Ice Cream in Coconut
INGREDIENTS
- 2 litre good quality vanilla ice cream
- 1 egg
- 1 cup flour
- 3/4 cup water
- 1 1/2 cup fine dry breadcrumbs
- 2 tbsp desiccated coconut (unsweetened)
- enough oil for deep frying
HINT: It is extremely important that the ice cream is solid and frozen and the oil is sufficiently hot
enough to seal and cook the surface of the coating within seconds.

To prepare:
- Make 6 large scoops of ice cream and return to the freezer for 1 hour
- Make a thick batter of egg, flour and water
- Coat ice cream balls with batter
- Roll in breadcrumbs and coconut to coat thickly
- Return to the freezer and deep freeze for at least 3 days
- Just before serving to guests, heat oil to moderate heat
- Slide balls ONE AT A TIME and cook for a few seconds till golden brown
- Serve at once
I usually like to serve mine with fresh fruits like strawberries or mango.
