Chinese Recipe for Deep Fried Ice Cream in Coconut

INGREDIENTS

  • 2 litre good quality vanilla ice cream
  • 1 egg
  • 1 cup flour
  • 3/4 cup water
  • 1 1/2 cup fine dry breadcrumbs
  • 2 tbsp desiccated coconut (unsweetened)
  • enough oil for deep frying
HINT: It is extremely important that the ice cream is solid and frozen and the oil is sufficiently hot enough to seal and cook the surface of the coating within seconds.

To prepare:

  • Make 6 large scoops of ice cream and return to the freezer for 1 hour
  • Make a thick batter of egg, flour and water
  • Coat ice cream balls with batter
  • Roll in breadcrumbs and coconut to coat thickly
  • Return to the freezer and deep freeze for at least 3 days
  • Just before serving to guests, heat oil to moderate heat
  • Slide balls ONE AT A TIME and cook for a few seconds till golden brown
  • Serve at once
I usually like to serve mine with fresh fruits like strawberries or mango.
