Vietnamese Recipe for Sweet Ginger Rice
INGREDIENTS
1 cup uncooked glutinous rice
- 1/2 cup dark palm sugar (or brown sugar)
- 1 inch fresh ginger (grated)
- 1/2 cup fresh coconut (grated) or desiccated coconut
- 2 tbsp peanuts (toasted & chopped)
Freshly grated coconut can be bought frozen in most Asian grocery store. Simply thaw the package out a
an hour before use.

To prepare:
- Soak glutinous rice in water for about 8 hours then drain
- You will need to steam the rice for this recipe
- Pour rice into a steamer basket lined with cheesecloth or muslin
- Set this over a pot of boiling water, cover and steam till tender (20 mins)
- Take rice out and place in a bowl
- Cover and keep warm
- Using a small saucepan over medium heat, add in sugar and about 3/4 cup water
- Stir till sugar dissolved and boil for about 1 min
- Add in ginger
- Reduce heat and simmer for 5 mins (just about simmer)
- Pour syrup over cooked rice
- Stir to coat rice
- Serve garnished with coconut and peanuts
Variation: You can flatten the sweet rice into a flat shape then cut it out into
slices.
