Vietnamese Recipe for Sweet Ginger Rice

INGREDIENTS

    1 cup uncooked glutinous rice
  • 1/2 cup dark palm sugar (or brown sugar)
  • 1 inch fresh ginger (grated)
  • 1/2 cup fresh coconut (grated) or desiccated coconut
  • 2 tbsp peanuts (toasted & chopped)
Freshly grated coconut can be bought frozen in most Asian grocery store. Simply thaw the package out a an hour before use.

To prepare:

  • Soak glutinous rice in water for about 8 hours then drain
  • You will need to steam the rice for this recipe
  • Pour rice into a steamer basket lined with cheesecloth or muslin
  • Set this over a pot of boiling water, cover and steam till tender (20 mins)
  • Take rice out and place in a bowl
  • Cover and keep warm
  • Using a small saucepan over medium heat, add in sugar and about 3/4 cup water
  • Stir till sugar dissolved and boil for about 1 min
  • Add in ginger
  • Reduce heat and simmer for 5 mins (just about simmer)
  • Pour syrup over cooked rice
  • Stir to coat rice
  • Serve garnished with coconut and peanuts

Variation: You can flatten the sweet rice into a flat shape then cut it out into slices.
