Singaporean Recipe for Lotus Seed Soup or Lin Chi Kang

INGREDIENTS FOR LOTUS SEED SOUP

  • 180g dried lotus seeds
  • 180g sugar
  • 7 cups water
TIP: Dried lotus seeds can sometimes be purchased from Chinese medicinal shops. Available in packages or by the weight.

We hope you enjoy making this very famous Singaporean hawker street dessert known as lotus seed soup or lin chi kang.

To prepare:

  • Before using the lotus seeds, soak them first in water for 10 mins
  • Drain and rinse, then soak again
  • Repeat at least 3 times
  • Using a pot, add enough water then the lotus seeds
  • Bring to a boil and boil till seeds are almost soft
  • Drain then using a sharp knife, remove remaining skins and the hearts of the seeds (bitter tasting)
  • Put the skinned lotus seeds in 7 cups of water
  • Steam over boiling water (30 mins)
  • Remove then add sugar, stir till sugar dissolves
  • Pour into individual serving bowls and serve hot
TIP: If possible, try getting lotus seeds that have been halved so you don't have to spend too much time and efoort removing the bitter hearts. Canned ones is one way to use lotus seeds.
