Korean Recipe for Sweet Rice Punch (Sik Hae)

INGREDIENTS

  • 1 cup water
  • 1 1/2 cup barley germ (powder)
  • 11 cups water
  • 6 tbsp sugar
  • 1 tbsp pine nuts
  • 10 lemon slices
Sweet Rice Punch is generally not as sweet as Persimmon Punch but both are popular desserts that are served at many special Korean occasions and banquets.

To prepare:

  • In a large pot, add in 1 cup water to wash the sweet rice and cook
  • Mix in the barley germ powder and the rest of water
  • Let sit for 3 to 4 hours
  • Save the juice (all 10 cups) and discard the residual barley
  • Put sweet rice with barley juice in a rice cooker
  • Set at 'warm' (NOT COOK) for minimum of 4 hours till 70% or rice floats to top
  • Add sugar, stir well then refrigerate till cold
  • Pour iced rice punch in bowls
  • Add in the pine nuts and lemon slices as garnish
