Indian Dessert Recipe for Sweet Saffron Rice

INGREDIENTS

  • 1 cup basmati rice
  • 1 cup sugar
  • pinch of saffron threads
  • 1 1/4 cup water
  • 2 tbsp ghee
  • 3 cloves
  • 3 cardamoms
  • 1/4 cup golden raisins

TO DECORATE: few pistachio nuts and/or varak or silver leaves.

To prepare:

  • Rinse the rice twice under cold running water
  • In a pot, bring water to a boil, add rice, stir constantly
  • When rice is half cook, remove from heat, drain and set aside
  • Boil sugar, saffron, water in a pan
  • Stir till syrup thickens then remove
  • Heat ghee, cloves and cardamons in a separate pan
  • Remove pan from heat
  • Return rice to low heat and add raisins, stirring
  • Pour syrup over rice and stir
  • Pour in ghee mixture over rice, let simmer over low heat for 10 to 15 mins
  • Check to see if rice is cooked, if not, add water and let simmer
  • Serve warm, decorated with pistachio nuts and varak (silver leaves) - optional
If you prefer a stronger saffron flavor, place the threads on a piece of foil and toast them lightly under a hot broiler for a few seconds. Be careful not to burn them! Crush finely before adding to the sugar to make the syrup.
