Vietnamese Recipe for Banana Cake or Banh Chuoi Nuong

INGREDIENTS FOR BANANA CAKE

  • 1 1/4 lbs ripe bananas
  • 1 cup sugar
  • 1 cup coconut milk
  • 1/2 tsp vanilla extract
  • 2 tbsp butter (melted)
  • 7 slics of day old sandwich bread
TIP: This dessert is wonderful with a coop of vanilla ice cream.

We hope you will enjoy making this delicious Vietnamese banana cake or Banh Chuoi Nuong.

To prepare:

  • Slice banana diagonally then sprinkle with 1/2 sugar
  • In a pot, pour in the coconut milk then add in the other 1/2 sugar
  • Bring everything to a gentle simmer till sugar dissolved
  • Add in the vanilla extract and stir
  • Cut the crust from the bread then soak bread in the coconut mixture
  • Remove from heat and set aside
  • Butter a 12 inch non-stick pan
  • Arrange a layer of banana slices on the bottom of the pan then cover with one layer of the bread
  • Repeat till and finish with a layer of bananas on the top
  • Do not add any remaining coconut milk
  • Drizzle with remaining butter on top
  • Cover with a foil and bake in preheated oven for 1 hour
  • Rest for at least 12 hours before cutting with a sharp knife
