Vietnamese Recipe for Banana Cake or Banh Chuoi Nuong
INGREDIENTS FOR BANANA CAKE
- 1 1/4 lbs ripe bananas
- 1 cup sugar
- 1 cup coconut milk
- 1/2 tsp vanilla extract
- 2 tbsp butter (melted)
- 7 slics of day old sandwich bread
TIP: This dessert is wonderful with a coop of vanilla ice cream.

To prepare:
- Slice banana diagonally then sprinkle with 1/2 sugar
- In a pot, pour in the coconut milk then add in the other 1/2 sugar
- Bring everything to a gentle simmer till sugar dissolved
- Add in the vanilla extract and stir
- Cut the crust from the bread then soak bread in the coconut mixture
- Remove from heat and set aside
- Butter a 12 inch non-stick pan
- Arrange a layer of banana slices on the bottom of the pan then cover with one layer of the bread
- Repeat till and finish with a layer of bananas on the top
- Do not add any remaining coconut milk
- Drizzle with remaining butter on top
- Cover with a foil and bake in preheated oven for 1 hour
- Rest for at least 12 hours before cutting with a sharp knife
