Ganghwe or Eggs with Beef

INGREDIENTS

  • 2 eggs, separated
  • sesame oil
  • 12 oz (375g) filet of beef
  • 1/2 tsp finely grated fresh ginger
  • 1 tsp finely chopped or crushed garlic
  • 1 tsp finely chopped scallions
  • 1 tsp sesame oil
  • 1 to 2 gsp toasted, crushed sesame seeds
  • 4 tsp light soy sauce
  • 2 tsp honey or sugar
  • 1/4 tsp ground black pepper
  • thin strips of silgochu (dry red chilli)
  • very fine young scallions or large chives

To prepare:

  • Beat egg yolks and whites separately with a fork
  • Light grease a heavy frying pan with oil and pour in beaten yolks
  • Swirl frying pan to make a paper-thin omelet
  • When set, turn and lightly cook the other side
  • Turn onto a plate
  • Repeat with white of eggs
  • Cut yellow and white omelets into fine strips
  • Slice beef into very fine shreds, marinate in seasonings for 20 mins
  • Stir fry beef in heated wok without any oil or cook on an ungreasted pre-heated griddle for just a few mins
  • Cut off white portion of scallions and save for salads, etc.
  • Pour boiling water over scallion leaves to make them pliable
  • Drain off water after 1 min, then make little bundles of egg strips, beef strips and strips of chilli
  • Bind them tightly with the scallion leaves, leaving strips of egg and beef showing at either end
  • Dip in sesame seed sauce which is made by mixing 1/2 cup toasted, crushed sesame seeds with 1 tsp sugar, 3 tbsp vinegar and 4 tbsp light soy sauce
