INGREDIENTS

  • 300 gm grated coconut
  • 2 stalks galangal
  • 5 shallots
  • 1 tsp shrimp paste
  • 1/2 cup sugar
  • 1/2 cup palm sugar
  • dried roasted peanut
  • dried shrimp
  • fresh ginger , diced
  • fresh shallot , diced
  • mango , diced
  • bird chillie
To be use as a Thai food side dish

To prepare:

  • Dry-roasted coconut until light brown then pound it
  • Grind galangal, shallot and shrimp paste in a blender
  • Combine mixture with sugar, palm sugar and coconut in a boiling pot
  • Stir till sticky
  • Serve using side dish as a wrap, top with gravy
This dish is best served as an appetizer. This is a vegetarian dish, however, it does contain shrimp paste. If you are a pure vegetarian then this dish may not be suitable for you, or you may try to make this without the shrimp paste.
