Kuih Bingka or Baked Tapioca Cake

INGREDIENTS

  • 5 cups grated tapioca
  • 1 1/2 cups sugar
  • 1 tsp salt
  • 4 cups coconut milk
  • Butter

Kuih Bingka or Baked Tapica Cake

Kuih bingka is very easy to make. It is fast and quick, makes a great snack!

To prepare:

  • Grease a large baking tray with some butter
  • Mix all ingredients and pour into baking tray
  • Spread evenly
  • Brush surface with a little butter
  • Bake in moderate heat for 2 hours until the surface becomes brown
  • Remove from oven and allow to cool

To serve

  • Make sure the kuih bingka cools competely before cutting (will fall apart if warm)
  • Cut into square shapes
FYI: The 'pearls' in bubble tea drinks sold in Chinese cafes are made out of tapioca. They generally are tasteless on their own but add honey or brown sugar and they will taste great!
