Lotong (Malay Compressed Rice)

INGREDIENTS

  • 2 cups/ 300g rice (washed & drained)
  • 4 cups/ 1 litre boiling water
  • 1 medium sheet banana leaf

Lontong Rice is very popular among the Malays

To prepare:

  • Cook rice in the water till soft.
  • Transfer to a shallow square/ rectangular dish.
  • Place a banana leaf over and press on it till rice is firmly packed.
  • Stand a weight on it and leave aside till rice is cold.
  • Turn out and cut into cubes.
The banana leaf that is placed over the lontong is use for added flavor, not necessary to use.

You can serve the rice cubes or lontong with satay, sambal kacang (peanut sambal) or masak lodeh (vegetable in coconut milk).
