Indian Vegetarian Recipe for Cooking Mushroom Masala
INGREDIENTS
- 1/2 kg mushrooms
- 4 1/2 tsp oil
- 2 onions - chopped
- 1 tsp garlic paste See Below
- 1 tomato - chopped
- 1/2 tsp turmeric (haldi) powder
- 1/2 tsp garam masala See Below
- 1/2 tsp red chilli powder
- Salt to taste
- 15 gm green coriander - chopped
Garlic Paste Recipe: Soak 300 gm garlic cloves overnight to soften skin. Peel and chop roughly. Process till pulped. Store in airtight container and refrigerated for 4 to 6 weeks.
Garam Masala Recipe: (445 gm) Finely grind the following:
- 90 gm cumin seeds
- 40 gm black peppercorns
- 75 gm black cardamom seeds
- 30 gm fennel seeds
- 40 gm green cardamom seeds
- 30 gm corinader seeds
- 20 gm cloves
- 20 gm black cumin seeds
- 20 X 2.5 cm cinnamom sticks
- 20 gm mace powder
- 15 gm dry rose petals
- 15 gm bay leaves
- 15 gm ginger powder

To prepare:
- Cut mushrooms in slices
- Heat oil in wok (kadhai) and fry onions till golden in colour
- Add garlic paste and chopped tomatoes, mix well
- Mix in turmeric powder, garam masala, red chilli powder and salt, fry for 3 to 4 mins
- Stir in mushrooms, simmer till mushrooms are tender, adding very little water if necessary
- Garnish with chopped coriander and serve hot, accompanied by any curry dish and Chappatis
