Indian Recipe for Cooking Mutton Kurma & Indian Foods

INGREDIENTS

  • 1 1/2lb/ 750g mutton (cut into large chunks)
  • 4oz/ 120ml coconut oil
  • 4oz/ 125g ghee
  • 2 in/ 5cm piece cinnamon
  • 1/2pt/ 300ml plain yogurt
  • salt to taste
  • Cilantro (chopped) for garnish
POUNDED INGREDIENTS
  • 6 red chillies
  • 2 tsp coriander
  • 3 tsp poppy seeds
  • 1 in/ 2.4cm piece ginger
  • 1 large onion
  • 1 tsp peppercorns

To prepare:

  • Stir coconut oil into pounded ingredients.
  • Add cinnamon and meat. Mix well.
  • Leave aside for at least 1/2 hour, turning meat over occasionally.
  • Remove meat from marinade sauce.
  • Heat ghee in a pan. Add marinade sauce and cook for 3 minutes. (you should be able to smell the fragrance)
  • Put in meat and cook till half done.
  • Add yogurt and salt.
  • Simmer over low heat till meat is tender.
  • Garnish with cilantro and serve.

Serve with boiled white rice.
