Sar Hor Fun
INGREDIENTS
- package of broad flat white Chinese noodles
- 1 chicken breasts (sliced into strips)
- 2 to 4 squid (cut into slices)
- 20 shrimp
- 1 fish cake (cut into slices)
- 1 strip char siew or BBQ pork (cut into slices)
- 1 can of chicken stock
- Buck Choi
- 2 clove garlic (chopped)
- 2 cups water
- One egg (beaten)
- 2 tbsp light soy sauce
- 2 tbsp oil
- 1 scallion or green onion (chopped)
- Pepper to taste
- Pickled green chilli (to serve on side)
Pickled green chillies are easy to make. Simply buy a whole bunch of green jalapeno peppers, chop into pieces then let dry for at least an entire day. Remove seeds if you wish for milder taste. Put peppers in a clean, sterilized jar, then add vinegar. Add enough brown sugar - add more if you prefer sweeter. Will keep in fridge for at least 1 month.

To prepare:
- Transfer broad noodles onto a microwave dish and microwave for at least 1 minute. Set aside
- Put 1 tbsp of oil into wok and stir fry 1/2 of the chopped garlic
- Add noddles and coat with light soy sauce
- Remove from wok and onto serving dish
- Place the rest of the oil into wok and stir fry the rest of the garlic
- Add 1 cup of chicken broth, then 2 cups water (add more water if you prefer a watery mixture)
- Add slices of chicken breasts
- Add prawns, slices of fish cakes and squid
- Boil till everything is cooked
- Add in char siew
- Add in buck choi
- Bring everything to a boil again then turn off heat
- Stir in egg
- Add in pepper for taste
- Pour soup over noodles
- Garnish with green onions
- Serve immediately with pickled green chillies
Ipoh Sar Hor Fun is probably one of the most sought after and the best tasting in Malaysia.
