Abalone Soup
INGREDIENTS
- 1 can abalone (drained & sliced)
- 100g lean pork meat (shredded)
- 1 tbsp soy sauce
- 1 tsp cornflour
- 1/2 tsp sugar (optional)
- 50g Chinese mushrooms (soaked & sliced)
- 1 tbsp vegetable oil
- 5 slices green ginger (chopped)
- 1.5 litre water
- salt & pepper to taste
- 1 celery stalk (cut into 2 cm length)
- chopped spring onions (garnish)
- watercress (garnish)

To prepare:
- In a saucepan, heat oil and fry ginger till light brown
- Add in pork bones and water and simmer for 1 1/2 hours
- Marinate the meat in a mixture of soy sauce, cornflour, salt, pepper and sugar
- When stock is ready, remove bones, add the mushrooms and meat in its marinade
- Allow to cook for 15 mins
- Add celery during the last 5 mins
- Add abalone last and allow it to heat through
- Garnish soup with chopped spring onions and watercress, serve in large bowl
