Thai Recipe for Spiced Fish Baked Thai Style

INGREDIENTS

  • 4 red snapper or mullet (or any fish of your choice)
  • banana leaves
  • 1 lime
  • 1 garlic clove (thinly sliced)
  • 2 tbsp Thai Red Curry Paste
  • 4 tbsp coconut milk
  • 1 bunch spring onions (sliced)
  • strings
  • garnish: slices of lime and spring onion (chopped)

To prepare:

  • Clean entire fish, remove sacles and make several deep slashes in the side of each with sharp knife
  • Place each fish on a layer of banana leaves
  • Thinly slice 1/2 lime and tuck slices into slashes in fish with slices of garlic
  • Sprinkle sliced spring onions over fish
  • Grate rind and squeeze juice from remaining 1/2 lime and mix with curry paste and coconut milk in bowl
  • Spoon over fish
  • Wrap leaves over fish, enclose completely
  • Tie firmly with string and cook over medium-hot grill for 15 to 20 mins, turing occasionally
  • To serve: open up parcel by cutting along top edge with knife and fanning out leaves
  • Sprinkle with chopped spring onions and slices of lime

Banana leaves make a perfect, natural wrapping for grilled red snapper (or any other grilled food) but if they are not readily available in your area, use aluminium foil instead.
