Chinese Recipe for Crab in Black Bean Sauce Recipe

INGREDIENTS

  • 4 blue swimmers crabs (or medium sized crabs)
  • 1 medium onion (sliced)
  • 1/2 red capsicum (sliced)
  • 1/2 green capsicum (sliced)
  • 2 spring onions (sliced)
  • 1/2 cup peanut oil
  • 3 tsp salted black beans (soaked, drained, chopped finely)
  • 1 tsp garlic (chopped fine)
  • 1 tsp fresh ginger (chopped fine)
  • 1 tsp brown sugar
  • 1 tsp light soy sauce
  • 1/3 cup water
  • 2 tsp cornflour

To prepare:

  • Clean crab: remove flap from belly of each crab
  • Prise off top shell, discard soft grey entrails
  • Wash crabs and cut in half
  • Remove claws
  • Heat oil in wok
  • Cook crab pieces in oil for 3 mins, drain and set aside
  • Return 3 tbsp oil to wok
  • Stir-fry black beans, garlic and ginger for 30 secs
  • Add sugar and vegetables
  • Stir-fry for another 2 mins
  • Add in crab
  • Add soy sauce and water mixed with cornflour
  • Cook till sauce boils and thickens
  • Remove from heat and serve immediately
