Chinese Recipe for Fish in Wine Sauce Recipe

INGREDIENTS

  • 1 lb cod or halibut or red snapper fish (or any firm fish fillet) - cut into slices
  • 1/4 tsp salt
  • 1/4 tsp white pepper
  • 1 1/2 tsp vegetable oil
  • green onions (chopped)

    Wine Sauce
  • 2 tsp ginger (minced)
  • 1 tsp garlic (minced)
  • 1 tbsp light soy sauce
  • 1 tsp sesame oil
  • 4 tsp sugar (or to taste)
  • 2 tbsp cider vinegar
  • 1/2 cup chicken or shirmp stock or water
  • 1/4 cup white wine
  • 2 tsp cornstarch

To prepare:

  • In a small shallow dish, place the fish side by side
  • Sprinkle with salt & pepper (both sides), rub salt & pepper in, set aside (5 mins)
  • In a small bowl, combine all the ingredients (garlic, ginger, conrstarch, vinegar, wine, soy sauce, chiken or shrimp stock or water, sugar and sesame oil), mixing well then set aside
  • Heat wok on high heat
  • Add oil
  • Place the fish slices and fry till just about cooked (1 min on each side)
  • Remove and set fish slices aside
  • Add in the wine sauce mixture and bring to a boil
  • Toss in the green onions and cook everything (1 min), stir frequently till sauce has thickened
  • Add in the cooked fish slices and combined everything gently (make sure you don't break the fish slices)
  • Serve immediately with steamed rice
