Chinese Recipe for Garlic Chili Shrimp Recipe

INGREDIENTS

  • 450g fresh shrimp (shelled & deveined)
  • 5 dried red chilies
  • 8 cloves garlic (smashed & skinned)
  • 6 pieces ginger (shredded)
  • 3 tbsp garlic chili sauce
  • 2 tbsp oil
  • 3 scallions (sliced)

    Marinade
  • 2 tbsp rice wine
  • 1 tsp sesame oil
  • 1 tsp sugar
  • 1/2 tsp cornstarch mixed with 1 tbsp water

    Sauce
  • 1 tbsp rice wine
  • 1 tsp light soy sauce
  • 1 tbsp tomato ketchup
  • 1 tsp salt

HINT: Omit or lessen quantity of dried chilies if you prefer milder taste.

To prepare:

  • Mix all ingredients for the marinade sauce in a bowl
  • Add in the shrimp and toss to coat
  • Set aside to marinate for 20 mins
  • Combine the sauce ingredients and set aside
  • Cut the dried chilies lengthwise, remove seeds and membrane
  • Heat oil in a wok
  • Add chilies and let them scorch
  • Add shrimp, garlic and ginger and stir-fry quickly till shrimp turn pink and flesh firm (1 to 2 mins)
  • Add chili sauce and stir to blend
  • Add scallions and sauce mixture
  • Cook for another 1 to 2 mins
  • Transfer to a platter and servev with steamed rice
