Japanese Recipe for Lobster Miso Soup or Ise Ebi Miso Siru

INGREDIENTS

  • 1 lobster (head section and legs only)
  • 3 tbsp mixed dried seaweed (ogonori, wakame, tosakanori)
  • 4 cups fish broth
  • 2 tsp miso
  • 1/2 tsp ginger (grated)
  • 200ml miso soup

To prepare:

  • Soak the mixed seaweed in water for 5 mins, rinse then drain
  • In a large saucepan, combine fish broth, miso and ginger
  • Bring everything to a gentle boil
  • Meanwhile, clean the lobster head, separate legs and claws
  • Add to the fish broth
  • When broth returns to the boil, remove the lobster
  • Heat miso soup and pour into a large serving bowl
  • Put hot lobster into bowl
  • Arrange seaweed around lobster
  • Garnish with chives and serve at once

FYI: Did you know that at one time the lobster was considered poor man's food? It was not only used for prison food but fish bait and fertilizer!
