Japanese Recipe for Lobster Sashimi or Ise Ebi Otsukuri

INGREDIENTS

  • 1 whole fresh lobster
  • wasabi paste
  • sushi soy sauce
  • Garnish: shiso leaves, cucumber, daikon (sliced)

To prepare:

  • Remove tail from lobster
  • Cut along underside of shell and remove tail flesh
  • Remove intestinal tract
  • Wash lobster fresh in chilled water (with ice cubes) for 5 to 10 secs
  • Dry with paper towel
  • Cut into small bite-size pieces
  • Arrange lobster shell on a large flat platter
  • Spoon flesh into upturned tail shell
  • Serve with wasabi paste and sushi soy sauce
  • Garnish with shiso leaves, cucubmer and sliced daikon

FYI: In Japan, the shiso leaves (Beefsteak Plant or Perilla) is commonly used to flavor a lot of dishes, even on top of Japanese pizzas. Purple varieties are known as akajiso or Purple mint, Chinese basil or Wild Coleus.
