Indian Recipe for Fried Trout with Ginger

INGREDIENTS

  • 1.5kg king prawns (uncooked)
  • 1/2 cup fresh mint
  • 1/2 cup fresh coriander
  • 1/2 cup water
  • 2 cloves garlic (chopped fine)
  • 2 tsp fresh ginger (grated)
  • 1 tsp sambal olek
  • 2 tsp cumin seeds
  • 1 tsp fennel seeds
  • 1/2 tsp ground turmeric
  • 1/4 tsp ground cardamon
  • 1 brown onion (cut into wedges)
  • 150g sugar snap peas
  • 2 tbsp lim ejuice
  • 1/2 cup low-fat yogurt

To prepare:

  • Shell and devein prawns, leaving the tails intact
  • Blend or process the mint, coriander, water, garlic and ginger, sambel olke, seeds, tumeric and cardamon till smooth
  • Heat oil in a large frying pan
  • Add in onion, stiring over medium heat for 3 mins or till onions become soft
  • Add in herb paste, stir over heat for 1 min
  • Add prawns and sugar snap peas, cook for 4 mins or just about cook
  • Sprinkle lime juice and remove, place on serving plate
  • Serve with yogurt in another bowl

FYI: Sambal olek is also known as ulek or oelek. Is Indonesian in origin. It is a salty paste made from ground chillies and comes in a jar. Refrigerate immediately after using. The paste will not keep for long so use within a couple of weeks.
