Japanese Recipe for Poached Oysters with Wasabi Cream Sauce
INGREDIENTS
- 1 lbs fresh oysters
- 1 piece bacon (pan fried and chopped)
- 1 tsp garlic (chopped)
- 2 slices cheese
- 3 to 4 tsp wasabi
- 2/3 cup water
- 1 can cream chicken soup
- dash of lemon juice
- salt

To prepare:
- Rinse oysters lightly in running water
- Using a pot of water, add in a dash of lemon juice and a bit of salt
- Bring everything to a boil then begin blanching oysters
- Turn off heat and soak oysters for 1 min
- Remove and drain oysters
- Using a wok, add in oil and saute garlic till slighly brown
- Pour in cream of chicken soup and add in 2/3 cup water
- Add cheese and wasabi
- Place oysters in wok with sauce, cook over mild heat
- Do not bring to a boil, just a gentle simmer
- Dish oysters up onto a serving dish, cover with sauce and sprinkl with chopped bacon
