Japanese Recipe for Poached Oysters with Wasabi Cream Sauce

INGREDIENTS

  • 1 lbs fresh oysters
  • 1 piece bacon (pan fried and chopped)
  • 1 tsp garlic (chopped)
  • 2 slices cheese
  • 3 to 4 tsp wasabi
  • 2/3 cup water
  • 1 can cream chicken soup
  • dash of lemon juice
  • salt

To prepare:

  • Rinse oysters lightly in running water
  • Using a pot of water, add in a dash of lemon juice and a bit of salt
  • Bring everything to a boil then begin blanching oysters
  • Turn off heat and soak oysters for 1 min
  • Remove and drain oysters
  • Using a wok, add in oil and saute garlic till slighly brown
  • Pour in cream of chicken soup and add in 2/3 cup water
  • Add cheese and wasabi
  • Place oysters in wok with sauce, cook over mild heat
  • Do not bring to a boil, just a gentle simmer
  • Dish oysters up onto a serving dish, cover with sauce and sprinkl with chopped bacon
