Thai Recipe for Thai Shrimp and Pineapple Curry

INGREDIENTS

  • 1/2 fresh pineapple (skin removed, chopped into cubes)
  • 350g raw large shrimp (cleaned)
  • 2 tbsp Thai red curry paste
  • 1 3/4 cup coconut cream
  • 2 tbsp fish sauce
  • 2 tsp sugar
  • 2 tbsp fresh cilantro (chopped fine)

To prepare:

  • In a wok, heat the coconut cream
  • Slowly add in the curry paste, fish sauce and sugar
  • Heat till everything comes to a gently boil
  • Add the shrimp and 1/2 cilantro to the mix and simmer for 3 mins, taking care not to overboil the shrimp
  • Once done, remove from heat, serve in a serving bowl
  • Sprinkle remaining cilantro as garnish
  • Serve with steamed jasmine rice

If prefer, you can add chopped scallions just before serving.
