Chinese Fried Silver Needles Noodles with Shrimp Chinese Recipe for Stir Fried Silver Needle Noodles with Shrimp

INGREDIENTS

  • 450g silver needle noodles
  • 300g shrimp (shelled & deveined)
  • 1 ham (sliced into strips)
  • 114g green beans sprouts
  • 2 spring onions (sectioned)
  • 2 cloves garlic (crushed)

    Seasoning Sauce
  • 1 tbsp dark soy sauce
  • 1/2 tsp salt
  • 1/2 tsp sugar
  • 3 tbsp water

NOTE: Silver Needle Noodles is also known as Yin Zhen Fen or Lao Shu Fen and is a semi-transparent color noodles. It is also known as "rat noodles" in Malaysia and Singapore due to its unique shape. You should buy them fresh or sealed in a package.

To prepare:

  • Wash shrimps and wipe dry
  • In a wok, add 2 tbsp of oil
  • Add in the garlic, silver needle nooldes and the seasoning
  • Stir fry till noodles are hot enough
  • Add in the shrimp, ham and green beans sprouts
  • Stir-fry till the shrimp is cooked and the sauce dries up
  • Add in spring onions
  • Stir-fry for 1 more minute then serve immediately
