Prawns in Satay Sauce

INGREDIENTS

  • 12 large size prawns
  • 1 medium onion (sliced)
  • 2 tbsp vegetable oil
  • 1/4 cup bottled satay sauce (any type will do) or if you want to make it more authentic, see how to make peanut sauce
  • garnish: spring onion (sliced)

HINT: This simple recipe is also quite delicious using scallops. To make this into a scallop dish, wash the scallops well to get rid of any remaining sand. Discard the yellow-orange membrane around the white meat. If prefer, leave the roe as it can be eaten.

To prepare:

  • Peel the prawns and leave the tail intact
  • Cut down the back to remove dark vein
  • Flatten the prawns slightly
  • Heat oil in wok
  • Stir-fry onions till soft
  • Add in prawns, stir frly till lightly cooked (1 1/2 min)
  • Add in satay sauce and mix well
  • Remove and place on serving plate with garnish spring onions
  • Serve with rice and any boiled veggies
