Indian Recipe for Tandoori Shrimp

INGREDIENTS

  • 12 raw large shrimp (shells & veins removed)
  • 1 tsp fresh ginger (chopped fine)
  • 1/2 cup unsalted butter
  • 1 tsp chilli powder
  • 1 clove garlic (crushed)
  • 1/2 tsp kosher salt
  • 1 tsp ground coriander
  • 1 tsp ground cumin
  • 1/2 bunch cilantro (chopped fine)
  • red food coloring (optional)
  • bed of lettuce
  • 1 lemon (cut into wedges)
  • 1 green fresh chillis (de-seeded & chopped fine)

To prepare:

  • Preheat the broiler to high
  • Transfer shrimp to a dish
  • Melt the butter in a pan then remove from heat
  • In a small bowl, mix the ginger, garlic, chilli powder, salt, ground coriander and cumin, chopped cilantro and the red food coloring (if using)
  • Mix everything well and evenly
  • Toss in the shrimp and coat everything evenly
  • Cook the shrimp under the broiler, turning once
  • Arrange the shrimp over the bed of lettuce
  • Garnish with the lemon wedges and chillies
