Thai Recipe for Thai Squid Salad
INGREDIENTS
- 1 to 3/4 lbs fresh squid
- 1 lime (juice squeezed)
- 2 tbsp Thai fish sauce
- 1 fresh red chili (seeded & chopped fine)
- 1 inch ginger root (peeled & grated)
- 1 clove garlic (crushed)
- 2 stalks lemon grass (thinly sliced)
- 6 green onions (thinly sliced)
- 10 mint leaves (coarsely chopped)
- 2 tbsp cilantro leaves (chopped)
- 1 packet salad greens (any kind you wish)
- slices of red chili (seeded) - omit if you do not wish for extra heat

To prepare:
- To clean the squid, make sure you pull the head and tentacles away from body pouch and discard
- Remove the viscera and discard
- Remove transparent pen and purple skin from body
- Rinse the body pouch very well then slit open
- Score inside of body in a crisscross pattern
- Cut squid into strips
- Fill saucepan with water then bring to a boil
- Add squid and simmer for 1 min till squid turns opaque
- Drain water (discard water) and put squid into a bowl
- Add lime juice, fish sauce, chili, garlic, ginger, lemon grass and green onions
- Cover and marinate for 1 hour (or longer) in refrigerator
- Stir in cilantro and mint
- Arrange salad greens on plates and top with squid mixture
- Garnish with slices of chili and serve
If prefer, you can subsitute the slices of red chilis with red capsicum.
