Indian Recipe for Fried Trout with Ginger

INGREDIENTS

  • 4 trout (cleaned)
  • 1/4 tsp ground turmeric
  • 1 tbsp cilantro (chopped)
  • 2 fresh green chilies (seeded & chopped fine)
  • salt & pepper
  • vegetable oil (for brushing fish not deep-frying)
  • 2 tbsp ginger garlic paste
  • cilantro springs and lime wedges (garnish)

To prepare:

  • Preheat boiler to medium
  • Mix the ginger garlic paste, cilantro, turmeric, 1 tsp of pepper, pinch of salt together in a small bowl
  • Stir in enough water to make a paste
  • Using a sharp knife, make slashes on each trout diagonally (both sides)
  • Rub the spice mixture into the fish (especially into the slashes)
  • Brush trout with oil and cook under the hot broiler for 15 mins
  • Turn trout once and brush with more oil
  • Cook till fish flakes easily
  • Transer to warmed serving plate and garnish with cilantro and lime wedges
  • Serve immediately

Although this recipe is called 'fried', I used the broiler instead thus making for a healthier option.
