Korean Recipe for Tuna Tartar (Cham Chi Hwe)

INGREDIENTS

  • 1/2 lbs fresh tuna (sashimi grade)
  • 1/2 Korean pear or apple
  • 1 tbsp sugar
  • 1/4 tsp soy sauce
  • 1 tbsp lemon juice
  • 1/8 tsp garlic juice (squeeze juice from garlic cloves)
  • 1/8 tsp sesame oil

FYI: Korean pear is also known as Japanese pear, Asian pear and apple pear. This is a juicy, crispy and aromatic fruit that normally comes in yellow or is brown. You can enjoy eating this raw or made into sweet desserts. It can also be used to enhance all types of dishes like this tuna tartar or made into sauces for noodle dishes.

To prepare:

  • Shread tuna fine
  • Put in a dish, cover and refrigerate
  • Peel the pear and shred
  • Soak pear in salt water to preserve color then drain
  • In a bowl, mix the sugar, soy sauce, lemon juice, garlic juice and sesame oil well
  • Place shredded pear on a plate with a spoonful of tuna
  • Drizzle lemon and garlic mixture on top of tuna and serve

Because the tuna does not require any cooking, make sure you buy the fish from a well-respected fishmonger. The tuna must be fresh, has no fishy smell (smells like the "sea") and a good color.
