Thai Free Recipe For Cooking Pineapple and Shrimp Roasted Curry
INGREDIENTS
- 3 shrimps
- 2 tbs tamarind pulp
- 3 cups coconut cream
- 2 tablespoons palm sugar
- 3 tablespoons ground dried shrimp
- fish sauce
- mint leaves - garnish
- 2 stalks lemongrass
- 50gm galangal
- 20 dried chilies
- 100gm shallot
- 100gm garlic - crushed
- 1/2 tbs shrimp paste
- 2 tbs kafir lime peel
Blend together: for curry paste

To prepare:
- Blend or pound all the curry ingredients
- Add 1 cup coconut cream to curry and mix well
- Pour mixture into saucepan and add rest of cream
- After boiling add the pineapple, palm sugar, tamarind pulp, ground dried shrimp,
fish sauce and shrimps
To serve:
- Serve hot in a decorative bowl
- Garnish with mint leaves
For flair, try using medium sized tiger prawns instead of shrimp. Tiger prawns are a delicious substitute for shrimp. If you are going to use either tiger prawns or shrimp it is best to use fresh, not frozen ones. This easy to follow recipe makes a fantastic thai sea food dish.
