Sunomono or Vinegar Salad

INGREDIENTS

  • 1 small daikon radish
  • 1 cucumber
  • 5 tbsps rice wine vinegar
  • 2 tbsps sugar
  • 2 tsps sake
  • 1 tsp salt

TIP: To make it extra special, you can add two whole cooked prawn (peeled) to the dish. Other additions: small cooked shrimps, imitation crab meat.

To prepare:

  • Peel the daikon and slice it into thin, round slices
  • Slice cucumber to the same thickness
  • Salt the cucumber and daikon slices and leave them in a bowl about 5-10 min.
  • Wash off the daikon and cucumber slices and drain the water through a strainer
  • Mix the vinegar, sugar, and sake in a cup
  • Pour the vinegar mixture over the cucumber and daikon slices
  • Set aside at least 15 min. before serving
Makes about four servings.

NOTE: The word 'su' in sunomono indicates vinegar. This dish is best served as an appetizer or as a side dish. This dish is not only healthy but is light and refreshing.
