Sunomono or Vinegar Salad
INGREDIENTS
- 1 small daikon radish
- 1 cucumber
- 5 tbsps rice wine vinegar
- 2 tbsps sugar
- 2 tsps sake
- 1 tsp salt
TIP: To make it extra special, you can add two whole cooked prawn (peeled) to the dish. Other additions: small cooked shrimps, imitation crab meat.

To prepare:
- Peel the daikon and slice it into thin, round slices
- Slice cucumber to the same thickness
- Salt the cucumber and daikon slices and leave them in a bowl about 5-10 min.
- Wash off the daikon and cucumber slices and drain the water through a strainer
- Mix the vinegar, sugar, and sake in a cup
- Pour the vinegar mixture over the cucumber and daikon slices
- Set aside at least 15 min. before serving
Makes about four servings.
NOTE: The word 'su' in sunomono indicates vinegar. This dish is best served as an appetizer or as a side dish. This dish is not only healthy but is light and refreshing.
