Free Recipe for Thai Salad with Green Mango
INGREDIENTS
- 4 baby bok choy
- 1/2 bitter gourd ( bitter melon )
- 2 small leeks ( julienne strips )
- 1 cucumber ( julienne strips )
- 1 fresh green mango ( finely sliced )
- 1/4 cup/ 7g fresh coriander leaves
- fried onions, to garnish
DRESSNG INGREDIENTS
- 3 tbsp peanut oil
- 2 tbsp fish sauce
- 1/2 cup/ 125g sweet chilli sauce
- 1 tbsp lime juice
TIP: For that special touch, you can also add in roasted cashew.

To prepare:
- 4 baby bok choy
- 1/2 bitter gourd (bitter melon)
- 2 small leeks (julienne strips)
- 1 cucumber (julienne strips)
- 1 fresh green mango (finely sliced)
- 1/4 cup/ 7g fresh coriander leaves
- fried onions, to garnish
DRESSNG INGREDIENTS
- Steam or microwave bok choy until just wilted.
- Drain and finely shred.
- Peel and deseed bitter gourd and cut into thin strips.
- Heat oil in a wok and stir fry bitter gourd and leek for 2 minutes or until the vegetables are tender.
- Dressing: combine the peanut oil, fish sauce, lime juice and sweet chilli sauce. Mix well.
- Mix together the vegetables and bok choy and pour over the dressing.
- Allow to cool.
To serve, toss the coriander through the vegetables and sprinkle with fried onions. This is a healthy vegetarian recipe for cooking a delicious salad. Try our other vegetarian and thai recipes.
