INGREDIENTS

  • 500g/ 1lb firm white fish fillets
  • 4 kaffir lime leaves (finely shredded)
  • 1 tbsp fresh Asian basil (chopped)
  • 2 tbsp red curry paste
  • 100g green beans (very finely chopped)
  • oil, for shallow frying
CUCUMBER DIPPING SAUCE INGREDIENTS
  • 1 cucumber (finely chopped)
  • 3 tbsp sweet chilli sauce
  • 2 tbsp rice vinegar
  • 1 tbsp unsalted roasted peanuts (chopped)
  • 1 tbsp fresh coriander (chopped)

To prepare:

  • Place fish in the food processor and process for 20 seconds or till smooth.
  • Add lime leaves, basil and curry paste and process for 10 seconds.
  • Transfer fish mixture to a large bowl, adding green beans and spring onion, mix well.
  • Using wet hands, form 2 rounded tbsp of the mixture at a time into flattish patties.
  • Heat oil in pan over medium heat.
  • Cook 4 fish cakes at a time till they are golden brown on both sides.
  • Drain on paper towers and serve immediately with dipping sauce.
  • Dipping sauce: Combine all ingredients in a bowl and mix well.
This is a great appetizer dish. Garnish with coriander if prefer. This delicious fish appetizer can be served mild or spicy. You can also try this with spicy or mild dipping sauces. As with most Thai food recipes you can control the level of spice used to adjust to your taste palette.
