Thai Tom Kha Gai ( Chicken & Coconut Soup ) Free Recipe
INGREDIENTS
- 2 cups/ 500ml coconut milk
- 1 cup/ 250ml chicken stock
- 5cm piece of fresh galangal (peeled & sliced)
- 3 chicken breast fillets (cut into bite sized pieces)
- 1-2 tsp finely chopped chillies
- 1 tbsp fish sauce
- 1 tsp soft brown sugar
- 1/2 cup fresh coriander leaves
- extra coriander leaves for garnish

To prepare:
- Combine coconut milk, stock and galangal in a pan.
- Bring to boil and simmer over low heat for 10 minutes, stirring occasionally.
- Add chicken pieces and chilli to pan, simmer for another 8 minutes.
- Stir in fish sauce and brown sugar.
- Add coriander leaves
Serve immediately, garnished with remaining coriander leaves. This recipe makes a delicious chicken soup, thai style. Try making this instead of the usual chicken noodle soup.
