Chinese Recipe for Chinese Broccoli in Oyster Sauce


INGREDIENTS

  • 400g broccoli
  • 1 tsp peanut oil (or any vegetarian oil)
  • 1 garlic clove (chopped fine)
  • 2 shallots (chopped fine)
  • 1 tbsp rice wine (or dry sherry)
  • 5 tbsp oyster sauce
  • 1/2 tsp pepper (or to taste)
  • 1 tsp chilli oil (optional)

TIP: To make the chilli oil, use fresh green or red chillies. Put them into a jar then topped with olive oil or light vegetable oil. Cover the lid then sit the jar in a refrigerator for 3 weeks before using.

To prepare:

  • Cut the broccoli into small florets
  • Blanch the vegetable into a pot of hot boiling water (30 secs) then drain
  • Set aside
  • Heat oil in wok
  • Add shallots and garlic, stir-fry for 2 mins or till golden brown
  • Add in broccoli and stir-fry for 2 mins
  • Add in rice wine (or dry sherry) and oyster sauce for another 1 min
  • Sprinkle pepper and mix well
  • Just before serving, drizzle with a little chilli oil
