Thai Recipe for Thai Vegetarian Carrot and Mango Salad


INGREDIENTS

  • 4 medium sized carrots (grated)
  • 1 small ripe mango (peeled & sliced thin)
  • 200g firm tofu (drained & cut into small cubes)
  • 1 tbsp fresh chives (cut fine)

    Ingredients for Carrot and Mango Dressing
  • 2 tbsp fresh orange juice
  • 1 tbsp fresh lime juice
  • 1/2 tsp orange flower water (optional)
  • 1 tsp honey
  • 1 tsp sesame oil
  • 1 tsp sesame seeds (toasted)

TIP: Using a food processor to grate the carrot will save you time and effort!

To prepare:

  • To make the dressing: place all the ingredients for dressing into screw-top jar and shake well till well mixed
  • Using a wide salad bowl, place the carrot, mango, tofu and chives (reserve a little for garnish) together
  • Mix everything well
  • Sprinkle the dressing and toss well to coat
  • Just before serving, toss once more lightly
  • Add the leftover chives and sesame seeds
  • Serve immediately
