Singapore Recipe for Egg Bean Curd


INGREDIENTS FOR EGG BEAN CURD

  • 1,000 ml plain soya bean milk
  • 1 1/2 tsp salt
  • 5 egg whites
  • 3 egg yoks
  • dash of white pepper
  • dash of chicken stock powder (to taste)
TIP: It may seem a lot of soya bean milk but it's quite enough to fill up an 8 inches or 20 cm square flat tray. This homemade egg bean curd is excellent to use for steaming and deep frying.

To prepare:

  • In a bowl, combine the plain soya bean milk, egg whites, yolks, salt, pepper and chicken stock powder well
  • Strain the egg mixture using a strainer into a clean container
  • Line a 20cm square tray using baking sheet (make sure the sheet - extra paper - at each end so you can grab it easily)
  • Pour in the strained egg mixture
  • Using a wok or steamer, steam the tray till mixture is set (20 mins)
  • The egg bean curd is set when you slide a knife through it and it comes away clean

This is a very healthy alternative to buying the store-bought tofu.
