Japanese Recipe for Spinach with Roasted Sesame Dressing or Gomae


INGREDIENTS

  • 600g spinach (trimmed)
  • 1/3 cup white sesame seeds (toasted)
  • 1 tsp sugar
  • 1 1/2 tbsp Japanese soy sauce
  • 1/3 cup dashi stock

TIPS: You can subsitute using beans or watercress. Instead of using sesame seeds, you can also use peanuts or macadamia nuts or even tahini (sesame seed paste). Garnish the gomae with smoked dried bonito flakes (katsuobushi) if prefer.

To prepare:

  • Reserve 1 tsp toasted sesame seeds for garnish
  • Blend, process toasted sesame seeds till smooth
  • Using an empty container with a tight screw top, combine the ground sees, sugar, sauce and dashi together
  • Shake well till sugar dissolves
  • Wash spinach well
  • Bring a large saucepan filled with water to boil
  • Dip spinach into hot water then drain immediately
  • Rinse under cold water to stop cooking process
  • Wrap spinach in bamboo mat
  • Roll firm, gently squeeze out excess water
  • Cut spinach and arrange on serving platter
  • Just before serving, pour dressing over spinach
  • Sprinkle with reserved sesame seeds

TIP: If you cannot find fresh spinach, try using frozen spinach. I used the frozen spinach and it works just as well. Thaw before using.
