Korean Recipe for Egg Sandwich


INGREDIENTS

  • 4 pieces of whole wheat bread
  • 1 tbsp butter
  • 2 organic eggs
  • 2 tbsp cabbage (chopped)
  • 1 tbsp onion (chopped)
  • 1 tbsp carrot (chopped)
  • 1 tbsp brown sugar
  • 1 tbsp tomato sauce or ketchup

TIP: In this version, I subsitute the white bread with whole wheat bread to make it a healthier alternative.

To prepare:

  • In a flat pan, melt the butter (save a little for later) then toast the breads on both sides
  • Remove the bread and set aside
  • Using a bowl, mix the eggs with the cabbage, onion and carrot
  • Add the remaining butter to the pan then pour in the egg mixture
  • Cut the omelete into two separate pieces and place on the toast
  • Pour on tomato sauce then sprinkle with brown sugar
  • Serve immediately
