Indian Recipe for Onion Bhajias

INGREDIENTS

  • 3 large onions (sliced thin)
  • 2 fresh green chillies (seeded & chopped fine)
  • 3 tbsp fresh coriander (chopped)
  • enough vegetable oil for deep frying
  • 1/2 tsp onion seeds
  • 1/2 tsp cumin seeds
  • 1/2 tsp fennel seeds
  • 1/2 tsp black onion seeds
  • 1 1/2 cups besan
  • 1 tsp baking powder
  • 1 tsp ground turmeric
  • 1/2 tsp chilli powder
  • salt
  • pinch of asafetida

TIP: This very popular Indian recipe will make about 24 servings and is perfect for a side dish or a snack.

Do not put too many bhajias into the deep fryer as you will need room to turn them over. To avoid hot oil splasher, lower the bhajias slowly into the hot oil.

To prepare:

  • In a large pan, heat the oil and dry-fry the onion seeds, cumin, fennel and black onion seeds for a few seconds
  • Stir constantly to avoid burning
  • After they give off their aroma, remove from the heat and tip into a mortar or processor
  • Crush lightly then tip into a large bowl
  • Sift the besan flour, baking powder, turmeric, chilli powder, asafetida and salt into a big bowl
  • Mix well then add the onions, chillies and chopped coriander
  • Mix well to coat onions then stir in enough cold water to make a thick batter
  • Heat enough oil in a deep-fryer
  • Drop spoonsful of the mixture into the hot oil and cook till you achieve a golden brown color, turn once
  • Remove and drain on paper towels
  • Serve hot

TIP: If you are not too keen about onions, you can certainly subsitute the onions with other forms of vegetables such as cauliflower florets and even sliced mushrooms.
