Indian Recipe for Potato and Pea Curry
INGREDIENTS
- 750g potatoes (peeled/cubes)
- 2/3 cup frozen peas (thawed)
- 2 tbsp fresh mint (chopped)
- 2 tsp brown mustard seeds
- 2 tbsp ghee/oil
- 2 cloves garlic (crushed)
- 2 onions (sliced)
- 2 tsp fresh ginger (grated)
- 1/2 tsp chilli powder
- 1 tsp ground turmeric
- 1 tsp ground cumin
- 1 tsp garam masala
- salt and pepper to taste

To prepare:
- Using a pan, cook the mustard seeds over medium heat until they pop
- Add in the ghee/oil, onion, garlic, ginger and start cooking, stirring till onion becomes soft
- Add turmeric and chilli powder, ground cumin, garam masala and potato and stir till potato is coated
- Add 1/2 cup water, cover and simmer, stir occasionally for 15 to 20 mins till potatoes become tender
- Add peas, salt and pepper, simmer, covered for 5 mins till potatoes are cooked
- Just before serving, stir in mint
