Indian Recipe for Potato and Pea Curry

INGREDIENTS

  • 750g potatoes (peeled/cubes)
  • 2/3 cup frozen peas (thawed)
  • 2 tbsp fresh mint (chopped)
  • 2 tsp brown mustard seeds
  • 2 tbsp ghee/oil
  • 2 cloves garlic (crushed)
  • 2 onions (sliced)
  • 2 tsp fresh ginger (grated)
  • 1/2 tsp chilli powder
  • 1 tsp ground turmeric
  • 1 tsp ground cumin
  • 1 tsp garam masala
  • salt and pepper to taste

To prepare:

  • Using a pan, cook the mustard seeds over medium heat until they pop
  • Add in the ghee/oil, onion, garlic, ginger and start cooking, stirring till onion becomes soft
  • Add turmeric and chilli powder, ground cumin, garam masala and potato and stir till potato is coated
  • Add 1/2 cup water, cover and simmer, stir occasionally for 15 to 20 mins till potatoes become tender
  • Add peas, salt and pepper, simmer, covered for 5 mins till potatoes are cooked
  • Just before serving, stir in mint
