Indian Recipe for Roasted Madras Potatoes
INGREDIENTS FOR ROASTED MADRAS POTATOES
- 625g small Yukon Gold potaotes or baby red potatoes (unpeeled)
- 1 tsp hot curry paste or curry powder
- 2 tbsp olive oil
- 1/2 tsp ground cumin
- 1/2 tsp salt
- 2 tbsp chopped fresh mint (optional)

To prepare:
- Preheat oven to moderate heat
- Line a baking sheet using foil
- Wash potatoes under cold water then pat dry
- Mark each potatoe with an X using a knife (to allow flavors to infuse)
- Using a large bowl, combine the curry with oil, cumin and salt
- Toss potatoes in bowl with curry mixture, make sure everything is evenly coated
- Place potaotes on sheet
- Add any remaining curry mixture onto the top of each potatoes
- Place a loose foil on the top (don't seal!)
- Roast in middle rack of oven, stir occasionally till golden brown (25 to 30 mins)
- Remove from oven and toss with mint if prefer
