Indian Recipe for Roasted Madras Potatoes

INGREDIENTS FOR ROASTED MADRAS POTATOES

  • 625g small Yukon Gold potaotes or baby red potatoes (unpeeled)
  • 1 tsp hot curry paste or curry powder
  • 2 tbsp olive oil
  • 1/2 tsp ground cumin
  • 1/2 tsp salt
  • 2 tbsp chopped fresh mint (optional)

To prepare:

  • Preheat oven to moderate heat
  • Line a baking sheet using foil
  • Wash potatoes under cold water then pat dry
  • Mark each potatoe with an X using a knife (to allow flavors to infuse)
  • Using a large bowl, combine the curry with oil, cumin and salt
  • Toss potatoes in bowl with curry mixture, make sure everything is evenly coated
  • Place potaotes on sheet
  • Add any remaining curry mixture onto the top of each potatoes
  • Place a loose foil on the top (don't seal!)
  • Roast in middle rack of oven, stir occasionally till golden brown (25 to 30 mins)
  • Remove from oven and toss with mint if prefer
