Singapore Recipe for Spicy Long Beans


INGREDIENTS

  • 150g long beans (cut into 4cm in length)
  • 2 fresh red chillies
  • 4 shallots
  • 1 clove garlic
  • 1 tsp dried silver fish (soak till soft) - optional
  • 2 tbsp oil
  • dash of salt
  • dash of turmeric powder

TIP: Omit the dried silver fish entirely for this dish to be vegetarian.

To prepare:

  • In a blender, combine the red chillies, shallots, garlic and silver fish or fine ikan bilis till you get a paste
  • If you are not using the silver fish, add 1 tsp of water instead
  • Heat oil in a wok
  • Add in the chilli paste and fry till fragrant
  • Add in the long beans, salt and turmeric power
  • Stir well then serve on a dish

NOTE: Do not overcook the long beans. They should be slightly cooked with a crunchy texture.
