Japanese Recipe for Sweet Soy Pumpkin
INGREDIENTS
- 500g pumpkin (unpeeled)
- 1 1/2 cups dashi stock
- 2 tbsp mirin
- 1 tbsp Japanese soy sauce
- 1 1/2 tbsp sugar
TIPS: If you wish, you can add stir-fried minced pork or chicken to pumpkin to make
it a more substantial meal.

To prepare:
- Cut pumpkin into cubes, discard seeds
- Slice skin off at random (to give it a 'mottled' surface look)
- Put pumpkin cubes into a saucepan with skin side down
- Add dashi stock, sugar and mirin
- Bring everything to a boil
- Reduce heat
- Simmer, covered (5 mins), stir after 2 mins
- Add soy sauce and cook till pumpkin turns tender (8 mins)
- Remove from heat
- Serve hot or at room temperature
TIP: It is very important that you do not overcoook the pumpkin or it will fall
apart.
