Japanese Recipe for Sweet Soy Pumpkin


INGREDIENTS

  • 500g pumpkin (unpeeled)
  • 1 1/2 cups dashi stock
  • 2 tbsp mirin
  • 1 tbsp Japanese soy sauce
  • 1 1/2 tbsp sugar

TIPS: If you wish, you can add stir-fried minced pork or chicken to pumpkin to make it a more substantial meal.

To prepare:

  • Cut pumpkin into cubes, discard seeds
  • Slice skin off at random (to give it a 'mottled' surface look)
  • Put pumpkin cubes into a saucepan with skin side down
  • Add dashi stock, sugar and mirin
  • Bring everything to a boil
  • Reduce heat
  • Simmer, covered (5 mins), stir after 2 mins
  • Add soy sauce and cook till pumpkin turns tender (8 mins)
  • Remove from heat
  • Serve hot or at room temperature

TIP: It is very important that you do not overcoook the pumpkin or it will fall apart.
