Singapore Recipe for Stir-Fried Vegetable Assortment


INGREDIENTS

  • 1 medium onion (sliced)
  • 2 stalks celery (sliced diagonally)
  • 1 medium carrot (sliced)
  • 1 small zucchini (sliced)
  • 8 green beans (sliced)
  • 6 small broccoli florets
  • 6 small cauliflower florets
  • 60g bamboo shoots (sliced)
  • 12 baby corn cobs
  • 12 snow peas
  • 12 straw mushrooms
  • 100g fresh bean sprouts
  • 3 tbsp vegetable oil
  • 3/4 cup vegetable broth/stock (or chicken stock)
  • 1 tbsp light soy sauce
  • 1 tsp ginger (grated fine)
  • 1 tbsp garlic (chopped fine)
  • 3 tsp cornflour

To prepare:

  • Heat oil in wok
  • Add in ginger and garlic, stir-fry for a few seconds
  • Add in vegetables
  • Stir-fry vegetables for at least 5 mins or till cooked but still crisp
  • In bowl, mix in the stock, soy sauce and cornflour together and pour in the pan
  • Cook on high heat, stirring till sauce thickens and clears
  • Serve at once

HINT: You do not have to follow all the vegetable ingredients set out for this recipe. You can use other Chinese greens like bok choy, choi sum or whatever you want.
