Thai Recipe for Thai Pineapple and Cucumber Salad


INGREDIENTS FOR THAI VEGETARIAN PINEAPPLE AND CUCUMBER SALAD

  • 1 cucumber
  • 1 small fresh pineapple
  • 1 red onion (sliced thin)
  • 1 bunch of fresh watercress
Ingredients for Dressing
  • 3 tbsp lemon juice
  • 2 tbsp light soy sauce
  • 1 tsp brown sugar
  • 1 tsp chilli sauce
  • 2 tbsp fresh mint (chopped fine)

To prepare:

  • Peel and de-seed the cucumber
  • Cut cucmber into 1/2 inch to 1 inch pieces and set aside in a bowl
  • Peel the pineapple and cut into chunks
  • Remove pineapple core
  • Add pineapple pieces to the cucumber
  • Add onions and watercress, mix everything well
  • How to make Dressing: Combine all ingredients for dressing into a bowl, whisk together
  • Just before serving, pour dressing over salad and toss together (make sure you coat everything well)
  • Transer to a serving dish and serve
