Indian Recipe for Vegetable Kachori
INGREDIENTS
- 2 lbs mixed carrots and peas
- 2 small potatoes (cubed)
- 1/2 cup oil
- salt to taste
- 1/4 tsp turmeric powder
- 1/2 tsp ginger and garlic paste
- 2 green chillies (finely chopped)
- 1/2 tsp garam masala
- 1 tsp whole mustard seeds
- 1 tsp ground cumin
- 1 tsp ground coriander
- juice of 1 lemon
- oil for deep frying
Ingredients for Pastry
- 1/2 cup oil
- 2 1/2 cup plain flour
- Water

To prepare:
- In a saucepan, add the 1/2 cup oil and heat
- Add mustard seeds, cumin and coriander powder
- Stir in the vegetables (mixed carrots, peas and potatoes)
- Cover and let cook over medium heat, adding a bit of water
- Add garlic and ginger paste,
green chillies, salt and tumeric powder
- When vegetables are tender, add in garam masala and lemon juice
- Remove from heat and let cool
- Pastry: add 1/2 cup oil to 2 1/2 cup plain white flour
- Bind with water to form managable dough
- Take a small ball of dough, roll it out to form a 'pancake', about 1/2 inch thick with a rolling pin, the size
of your palm
- Place 1 tbsp of the vegetable mix in the centre of the pastry
- Gather pastry together and seal
- Remove excess dough from the top
- Fry in oil over medium heat or till golden brown on both sides
