Singapore Recipe for Vegetables with Mushrooms and Oyster Sauce
INGREDIENTS
- 1 bunch Chinese vegetables (bok choy, choy sum, gai lan)
- 8 dried Chinese black mushrooms (soaked)
- 2 tbsp vegetable oil
- 2 tbsp oyster ginger
- garnish: slices of chillies, deep-fried shallots

To prepare:
- Wash vegetables well and drain
- Cut off thick stalks from green sand cut leaves and stalks into strips
- Trim stems from mushrooms, squeeze water from caps
- Simmer in lightly salted water for 5 mins then driain
- Plunge the vegetable stems into boiling water to cook for 1 to 2 mins
- Remove then briefly blanch leafty parts and drain well
- Toss vegetables and mushrooms in oil over moderate heat till well coated
- Serve dressed with oyster sauce
- Garnish with slices of chillies or deep-fried shallots
HINT: Canned straw mushrooms or champignons works quite well in this recipe
if you do not like black mushrooms.
