Singapore Recipe for Vegetables with Mushrooms and Oyster Sauce


INGREDIENTS

  • 1 bunch Chinese vegetables (bok choy, choy sum, gai lan)
  • 8 dried Chinese black mushrooms (soaked)
  • 2 tbsp vegetable oil
  • 2 tbsp oyster ginger
  • garnish: slices of chillies, deep-fried shallots

To prepare:

  • Wash vegetables well and drain
  • Cut off thick stalks from green sand cut leaves and stalks into strips
  • Trim stems from mushrooms, squeeze water from caps
  • Simmer in lightly salted water for 5 mins then driain
  • Plunge the vegetable stems into boiling water to cook for 1 to 2 mins
  • Remove then briefly blanch leafty parts and drain well
  • Toss vegetables and mushrooms in oil over moderate heat till well coated
  • Serve dressed with oyster sauce
  • Garnish with slices of chillies or deep-fried shallots

HINT: Canned straw mushrooms or champignons works quite well in this recipe if you do not like black mushrooms.
