DIRTY RICE



3 tablespoons cooking oil
2 medium onions, chopped
4 toes garlic, chopped
2 ribs celery, chopped
3 shallots, chopped
2 tablespoons parsley
1/2 pound lean ground beef
1/4 pound chicken livers, chopped or ground
2 tablespoons dry sherry (if available)
1 tablespoon Worcestershire sauce
1 cube beef bouillon, dissolved in hot water
1/2 cup or 1/2 cup beef bouillon soup
3 cups cooked white rice
Salt and pepper, to taste

To heated cooking oil, add chopped onions, celery, and shallots. Saute until soft, at least 10 minutes. Add chopped or ground livers, ground beef, parsley and garlic. After browning meat thoroughly, add dry sherry and other liquids. Cover and simmer over low heat for 30 minutes. Remove from heat, add to rice and mix well. Good with beef or poultry recipes.
